Post Views:56
There’s a funny thing about Dinner Time – it happens every. single. day. And despite this known fact, even the best of us can have complete moments.
If you’ve been around KS for any length of time, you’ve probably heard the phrase “meal plan” more than once.
For some, making a meal plan is just combining two four-letter words. And for some, it’s been part of your routine for so long, it’s no biggie.
So, here are some easy and quick weeknight dinner ideas for busy individuals:
1. Pasta Primavera
Cook your favorite pasta and toss it with sautéed vegetables (like bell peppers, cherry tomatoes, and spinach). Drizzle with olive oil, sprinkle Parmesan cheese, and season with salt and pepper.
2. Quesadilla Wraps
Spread hummus or guacamole on a whole-grain tortilla. Add sliced chicken, cheese, and veggies. Fold and grill until the cheese melts. Slice into pinwheels for an easy-to-eat meal.
3. Vegetable Stir-Fry with Rice
Quickly stir-fry a mix of colorful vegetables (broccoli, bell peppers, snap peas) in a hot pan with ginger, garlic, and soy sauce. Serve over steamed rice or quinoa.
4. Egg Fried Rice
Scramble eggs in a pan and set aside. In the same pan, stir-fry leftover rice with mixed vegetables, soy sauce, and a dash of sesame oil. Add the scrambled eggs back in and stir until heated through.
5. Pita Pocket Sandwiches
Stuff whole-wheat pita pockets with sliced grilled chicken, lettuce, tomatoes, and your favorite sauce or dressing for a quick handheld dinner.
You can always prepare ingredients in advance, like marinating meat or chopping vegetables, to make the cooking process even quicker on busy nights. These recipes are designed to be simple and quick to prepare, making them perfect for busy weeknights.
