Coconut Palm Sugar or Gula Tuak or better known as Gula Melaka is a type of brown sugar made from Nira Kelapa, Nira Nipah, or Air Tebu (bamboo juice). This nira or sugar is then cooked until it turns concentrated and dry. After that, it is poured into a round mold (pandan leaves) and left to cool.
Gula Melaka is also used in various types of traditional dishes but most commonly in desserts including Kueh Buah Melaka, Kueh Keria Melaka, Onde-onde, Sagu Gula Melaka, Kueh Badak Berendam, and others.
Although it is sweet, Gula Melaka is considered healthy because it is high in vitamins B1, B2, B3, B6, minerals, and phytonutrients.
